I found this too but just used a clean tea towel to flatten them a little part way through the cooking process and a little at the end. Still soft in the middle.

Weigh the dough after you’ve mixed it up and then divide it by how many cookies you want. If you don’t know a specific amount just divide it by 24 or a different number until you get the right amount of grams

If you add up the quantity of ingredients as written, and divide by eight, you get roughly 120g. For you to have a different amount of cookies weighing 120g, you will have changed something such as chocolate chips etc (or used the recipe slider on the post).

Fab cookies but don’t know where you got the amounts from …I doubled the recipe and still only got 12 and that was weighing them exactly 120g

Oven may be too hot, cookie dough is too tightly rolled, or the cookie dough has been over mixed – it can be a few things!

We never flatten them before baking. Oven may be too hot, cookie dough may be too tightly rolled, or the cookie dough has been over mixed x

Yes, you can freeze baked! I would recommend 2-3 egg yolks if only using yolks x

Two questions – can I freeze these cookies baked? And what happens if I use only egg yolks? Do I have to add an extra one? I don’t have whole eggs

These came out beautifully, lovely and thick with lots of melty chocolate inside. I rolled the cookies a bit smaller and was able to get twelve chunky cookies out of this recipe. So, so good – will definitely be making these again.

The cookies not spreading is likely down to your oven running hotter than mine or any testing ovens, or because the cookie dough ball has been rolled too tightly or over mixed. They will flatten, so it’s worth lowering the temp of your oven and trying again x
