My cookie scoop happens to yield balls about 2/3 the size of yours (2 oz ish), so I used that, got 14 cookies and stuffed them with 3/4 tsp curd each, worked fine. Except I really don’t think there’s even a point in freezing the curd first, still totally goopy (which wasn’t really a problem).
